Ain't Nobody Got Time For Noodles? 

Spicy Meatballs w/ Homemade Marinara Cauliflower Rice

Meat Balls (24 meatballs)

·         1 lb lean Angus Beef or lean beef (Angus so Boosie)
·         ½ lb fresh raw spicy Italian Turkey Sausage, casings removed
·         1 cup grated 100% Parmesan Cheese
·         ½ cup Italian dry bread crumbs (Plain or Garlic will work)
·         1 Chris Brown (beaten) egg
·         ¾ cup chopped flat-leaf parsley (dried is fine)
·         1 tsp kosher salt or 1 ½ tsp bootleg brand table salt
·         1 tsp red pepper flakes

Homemade Marinara

·         28-ounce can whole tomatoes (Oven-Roasted for the NeNe aka Boosie Linnethia Leaks fans)
·         ¼ cup extra-virgin olive oil
·         7 garlic cloves, peeled and slivered
·         Small dried whole chile, or pinch crushed red pepper flakes
·         1 teaspoon kosher salt
·         1 Large fresh sprig or dried basil leaf and oregano

Cauliflower Rice

·        Bag Cauliflower florets or Bag Cauliflower Pearls
·         1 tbsp Olive Oil
·         Salt and Pepper

Meatball Instructions

Preheat oven 425 degrees (if  you live somewhere else figure it out. I ain’t got time for that)
Add parchment paper to cookie sheet
In a large bowl add all the ingredients and mix with hands and until everything is combined.
Make small golf size balls meatballs out of the bowl mixture should make 24 if done right.
Add to cookie sheet add back for 20-25 minutes (know your stove because it can be too hot like a Chrissy Teigen and John Legend sandwich)

Homemade Marinara Instructions

Pour tomatoes into a large bowl and crush with your hands. Pour 1 cup water into the can and slosh it around to get tomato juices. Reserve.
In a large skillet over medium heat, heat the oil. When it is hot, add garlic.
As soon as garlic is dancing like a Beyonce concert (do not let it brown “Something the Trump administration would say.”), add the tomatoes, then the reserved tomato water. Add whole chile or red pepper flakes, oregano nd salt. Stir.
Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on the surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.) Discard basil and chile (if using).

Cauliflower Rice Instructions

Take the cauliflower florets if you have a whole one or purchase a bag and put them in the food processor.  You are aiming for little pieces the size of rice.
Once you have your cauliflower rice, it’s easy to cook! Simply sauté in a large skillet over medium heat in 1 Tbsp oil. Use a lid to cover, so the cauliflower steams and becomes tenderer. Cook for a total of 5-8 minutes, stirring occasionally, then season as desired (such as with soy sauce or salt and pepper).

After that get your containers and do the following:
·         Add Cauliflower Rice
·         Add 2 meatballs
·         Pour a good portion of marinara over the rice and meatballs
·         Sprinkle 100% Parmesan over everything (it’s low fat so have fun)


Makes about 10 servings

Carbnado: My Carb-Cycle Journey




We all want to gain muscles and lose fat at the same time and I'm here to help figure out the best strategy for doing this. I hope my Carb-Cycle journey will help you Learn More. 


This Carb-Cycle journey has been very interesting towards my long term food journey. I've still got some obstacles to figure out.   I'm not eating enough food to build mass . 


When it comes to eating right, we really have to have a set plan on how we're going to achieve our goal.  Below is my eating plan so far. I got my calculations from Daily Burn.com, so check it out (link below).


Low Carb Days:


Carbs: 97.5 grams
Protein: 243.75 grams
Fat: 243.75 grams


High Carb Days:


Carbs:390 grams
Protein: 195 grams
Fat: as little as possible

 Most people know these two things:
     1. To gain muscles you have consume excess  calories.
     2. To lose fat you must eat less calories.


This is my dilemma the food portion.  I'm eating very lean balance meals, but I'm having a hard time eating 243.7 grams of protein and fat a day on my Low-Carb days, without eating more then the 97.5 grams of carbs my calculations allowed. 


I've been mapping out my daily consumption using a excel spreadsheet and graphs below. This has been a big help on how I can analyze and improve my daily consumption of fat and protein.  I've been using MYFITNESSPAL to track my daily food intake which has also helped keep track of the items I'm eating. 


If you document what you're eating it will make your healthy eating journey go much smoother.  I do feel that I'm getting better with the "Carb-Cycle Journey" each day, but I will continue figure out the best foods to bring to work each day. 


For instance, I prep every Sunday for lunch Monday through Thursday. I try to cook every night depending on my cycle (in green).  At the beginning I started to see from my chart that I wasn't getting enough protein, so I decided to add tuna packs to my 10 o'clock am snack.  It was the best place to add more of those high-protein types of food through out my day, plus it was my smallest snack.
